I believe that living healthy has to be intentional and usually bucks the typical American diet. After suffering for many years, I finally found out I was gluten and dairy-sensitive. However, it soon became apparent that a gluten-free and dairy-free diet were not enough. I was still eating processed “food” from boxes that didn’t help my multiple health issues. That’s when I decided that a whole foods diet was the best way to go. Not only did many of my health issues clear up, but I have more energy and clarity than ever before.
My recipes are predominantly Paleo, due to my focus on whole foods, meaning they are free of gluten, dairy and refined sugar. Every now and then I’ll add a recipe or two with corn, rice or potatoes, just because I have found that most Paleo eaters are still able to eat those foods in moderation, like myself.
But just because I eat Paleo doesn’t mean I don’t still like to satisfy my sweet tooth. Much like my grandmother, baking is my favorite way to cook. My grandmother used to love and nourish us with food, passing that on to me. My goal is to carry on that tradition, but adjust what’s on the plate to include more healthy meals. And while I can’t be in the kitchen cooking for you (but that would awesome), my goal is to be a source of love and nourishment for your family.
On a personal note, I am a wife to my superman, and mom to three of the most beautiful girls on the planet. Some of my favorite things are reading a good book (preferably on a quiet beach with my toes buried in the sand), finding creative ways to eat bacon, attempting and failing to recreate my Pinterest pins, making excuses for not exercising, living simply, and finding my way through life with Jesus by my side.
